Just Another Sleepless Night!

What makes a person be awake when it's three o'clock in the morning? You'd think as old as I am, I would just sleep, but NO, that's not happening! Good thing about computers though, they work all night! It didn't stay quiet around here  for long last night. Rounds of fireworks blasted for hours! Maybe that is why I am not sleeping, you think?

Looks like it is going to be a busy day! My sister gave me two tiger lilies for my birthday, and I have to figure out where to put them in the ground. That makes five different ones. Just watch my garden grow, one day it may overflow!

Thank God for gardens and fresh veggies. The cucumbers and tomatoes are making their way to the table. Today, though, zucchini is calling my name! Want to come over and help?

Zucchini Bread

3 eggs
1 cup oil
2 cups sugar
1 tbsp vanilla
2 cups loosely packed grated zucchini (about 3 small)
2 cups sifted flour
1 tsp cinnamon
1 tsp salt
2 tsp baking soda
¼ tsp baking powder
1 cup chopped nuts

Beat eggs until frothy; beat in sugar, oil and vanilla.  Beat until thick and lemon colored.  Add rest of ingredients, mix and pour into 2 greased loaf pans.  Bake at 350 degrees for 1 hour.
